After I lowered the MB I rolled the guards to prevent the really bad scrubbing on the lip but I still experience a really weird vibration coming fron the front and through the sterring wheel.
It happens after I come around a corner and drive on a straight bit of road and it only dose it in gear and when I'm accelerating For example, I will feel it when I'm accelarting out of a corner and even in a straight line but if I throw it in neutral I can't feel anything! After a couple of seconds it stops and I can't get it do it again unless I go around a corner!
Any ideas because I have

Could possibly be the start of the end of your inner CV's. You haven't replaced your drive shaft in your recent Boy money binge have you? If they are original units than this could be your problem.
I got the drive shafts off eBay recently, but i actually went there and got them installed just to check the guys out. There's just one massive factory of cv's and driveshafts. not so dodgy after all. I can collect and freight to you if needed but your probably just as equally better off getting them to send them to you.
check the wheel bearings also check the steering tie rod ends, a little bit bit of slack in the tie rods can cause vibration. When you get the vibration try jabbing the brakes (not enough to lock them ) if the vibration stops it is most likely the tie rod ends.
Just replaced the rack ends (same thing as tie rod ends aren't they?) It's just under acceleration. Smooth sitting on the highway at 100 km/h, but going through second gear especially I can feel it but only under medium to heavy acceleration!

Tie rod ends screw into the rack ends and attach themselves to the hub. Rack ends come out of the steering rack and have a long rod on them that attaches to the tie rod ends.
Well got a mechanic to take it for a test drive with me and he suspected bad engine mounts. The engine moves a lot because of the enormous amount of power and is causing trouble with the top support mount that attaches to the gear box. It is worn. Has anyone else done anything to prevent the engine rocking backwards and forwards so violently?
So, I'm not sure what to do now. I thought it must have been a drive shaft problem but might have to replace engine mounts first - is this hard to do. Please don't tell me the engine has to come out!!!

The engine doesn't have to be removed, just lifted off the mounts while you change them. Being rubber and in an environment of oil and fuel they would be fairly soft after 20+ years of use.
I am in the process of collecting some old mounts to make urethane versions for my ute for when the new engine goes in. They'll transmit much more vibration into the body/cabin/dash but for the amount of time I drive my ute I don't really care much.
As a REALLY dodgy patch job, you can use sikaflex or similar polyurethane sealant to fill the voids in the mount. It's not the best way, but it's a temporary solution which should get you by.
